      • Not checked at this time - Hired pest control company comes monthly.Mouse droppings were present behind the AC unit by the window area. Discussed control measures with operators.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Not checked at this inspection - Permit was expired. Please replace permit and have the permit be posted in an area visible to the public (outside kitchen).

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cold holding units were at 4C, however, both units were missing thermometers. Please have thermometers installed in each unit.A chest freezer was located in the mechanical room and was less than 0C. Good.Please also obtain a thermometer to measure internal temperatures of food.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishwasher was not on at the time of inspection. Operators indicated dishes were mainly manually washed. The unit was not tested at the time.A two compartment sink and a larger basin (w/ spray wand) were present. Discussed three step dishwashing method with operators. Dish detergent was present, however, a chemical sanitizer was missing.
