      • Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse had 0ppm chlorine on plate.
      • Corrective Action(s): In the meantime, operator will be bringing all dishes back to central kitchen in Vancouver to wash and sanitize properly.
      • In-use utensils that fit into the 3-compartment sink will be washed and sanitized in the 3-compartment dishwashing sink, every 4 hours.
      • Violation Score: 15
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Chemical dishwasher is not working.
      • Corrective Action(s): Dishwasher final rinse must reach at least 50ppm chlorine on plate.

      • 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: 1. Per staff, all dishes are washed and sanitized in the back of the base. However, compartment sink is not large enough to accommodate this operation. It is indicated on the last inspection report to install a larger compartment sinks to accommodate dishes that this facility will generate.
      • 2. It was discussed and agreed at intial inspection that shelf above dishwasher will be used for facility to dry dishes. Shelf is currently occupied with items from another operation.
      • Corrective Action(s): 1. Landlord and operator must come up with a plan - larger 3-compartment sink, or smaller containers to use (that fit into the existing compartment).
      • 2. Remove items as this shelf must be used to dry dishes.
