      • Observation (CORRECTED DURING INSPECTION): Ranch is sitting out at room temperature without time tracking. No timer available for ranch.
      • Corrective Action(s): Ranch must be kept refrigerated and therefore must be time tracked when sitting out at room temeprature. Set a timer on computer for ranch. Bottle of ranch discarded.

      • Observation (CORRECTED DURING INSPECTION): Per food safety plan, pizzas are room temperature hold for 2 hours (with time tracking), then discard. Only 2 types of pizzas had timers on at time of visit, the rest with no time tracking.
      • Corrective Action(s): Timers must be adequately turned on and pizzas must be time tracked.

      • -->wheeled rack (sesame sees lined each rack)
      • -->behind dough mixer
      • Corrective Action(s): Clean the above mentioned areas.

      • Observation (CORRECTED DURING INSPECTION): Again, pizzas observed at room temperature with no time tracking. Timers were not in use on computer. Two pizzas are measured to be 31.8oC and 30.5oC. Staff indicated there is no food safety plan provided from head office.
      • Corrective Action(s): Potentially hazardous foods must be kept hot over 60oC or cold under 4oC. It is the company's policy to keep cooked pizzas at room temperature for 2 hours, with the implementation of time tracking. If time tracking is not done, pizzas do not get to store at room temperature. Even if staff were to reheat pizza after ordering, time tracking is still required to store foods at room temperature.

      • Observation (CORRECTED DURING INSPECTION): Chain policy on pizzas is that pizzas are room temperature hold for 2 hours then discard. Timers are available for use to track pizzas. Timers were started at the beginning of visit. Temperatures of pizzas range from 29oC to 30oC.
      • Corrective Action(s): Pizzas must be time tracked, with timer on, as soon as pizzas are transferred to display counter. All pizzas except Veggie Garden discarded.

      • Observation (CORRECTED DURING INSPECTION): 1. Handsink in back preparation area is used to thaw a pack of frozen roast beef at time of visit.
      • 2. Paper towel is not in paper towel dispenser in staff washroom.
      • Corrective Action(s): 1. Handwashing station must be clear of items for proper handwashing to occur.
      • 2. Paper towel must be in dispenser so that staff can easily grab paper towel after handwashing.

      • Observation: Observed bucket of pizza sauce in container on floor in walk-in cooler, and a flat of Red Bull on floor in front of beverage cooler.

      • Observation: Although amount of rodent droppings is less than previous routine inspections, there are still droppings observed - around hot water tank.
