    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Foods were stored among chemicals and cleaning supplies under the hand sink. This is not a sanitary area - relocate food items to a clean area.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Ther was a large amount of half-cooked perishable foods stored out at room temp before the festival even began. Frozen foods were stored inside the 2 comp sink basins. Vegetable pakora measured 12-13C and all other deep fried foods measured 8C. These foods were meant to be cooked per order. Do not remove food out of cooler until event begins and orders are received.

      • Large sauce pots were used for cooking and did not fit into 2 comp dishwashing sinks in the permitted mobile vehicle. Staff were taking large pots home (unpermitted) to wash. Remove all large food equipment and do not use if they cannot be properly washed in the mobile vehicle 2 comp sink.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this mobile food vendor (Non-Critical)?
      • Roll of paper towels was not stored in a dispenser and the paper towel dispenser at the hand sink was empty. Please restock paper towel dispenser and ensure paper towels are stored in a suitable dispenser/holder.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Dirty, ripped cardboard boxes were used to contain open containers of spices. Remove cardboard boxes - use durable, washable containers instead.
