      • Cleaning cloths were visible on counters when not in use.Discussed with Tonya (Manager) and Dylan (Chef) to have cleaning cloths dispersed in solution when not in use, and to only use disposable paper towels when applying spray bottle disinfectant.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Low temp dishwasher had a concentration of 0 ppm in bar area.The staff changed the sanitizer container and ran multiple wash cycles before achieving a concentration of 100 ppm for chlorine.
