      • Cleaning clothes when not being actively used must be stored in a sanitizer solution to prevent potential cross contamination.

      • QUAT sanitizer was measuring at 0 ppm. Dispenser bottle seemed to be nonfunctioning. Chlorine sanitizer was available and mixed at 100 ppm. Facility will use chlorine moving forward.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Noodles were stacked too high in the cooler and measured at 8C. Please do not stack the noodles past the top of the bin as it will interfere with temperature control.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Chlorine test strips were not available. Please purchase test strips to monitor your sanitizer concentration.
