- Cloths were observed on serval food preparation surfaces. This practice and concerns associated with it were discussed with the operator. The operator corrected the situation by making a bucket of bleach sanitizer and storing the cloths in this solution.

- Carboard boxes are being broken apart and used to line the pizza cutting station. The boxes were observed to be placed on the cutting station with the box exterior side facing up. This is a concern because the exterior of the box may be dirty or contaminated.*** if you continue to use the carboard, please ensure the box interior is facing up and is changed any time it becomes soiled. However, it is recommended that a more suitable non-porous and easy to clean material be used in its place. ***
