- When dishes were being manually washed, a sanitize step was not taking place.When washing dishes manually:1. Scrape any food that remains2. Wash with soap and water3. Rinse with fresh water4. Sanitize. If using the chlorine based sanitizer available during inspection, make a 100 ppm solution in the second sink and fully submerge dishes for 2 minutes.5. Air dry
