    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: No active food grade sanitizer detected in sanitizer containers or spray bottles. Operator using a non-food grade cleaner for kitchen surfaces. (Public Health Significance) Sanitizing solutions must be food grade and strong enough to destroy microorganisms on equipment/utensils/food contact surfaces to prevent the contamination and reduce risk of illness.
      • Corrective Action: Operator to change sanitizing solutions to an approved food grade sanitizer. This may be either 100 ppm unscented bleach, 200 ppm QUAT or other approved food grade chemical.
