      • Observation (CORRECTED DURING INSPECTION): Waffles were left to cool on a rack in the dry storage room directly under other dishes and completely uncovered.
      • Corrective Action(s): Kitchen manager voluntarily discarded waffles. If you are cooling any food items, ensure to do this in your food prep/counter areas that are routinely sanitized. Also ensure that all foods are protected from any physical contamination.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Prep cooler was at 2-3 deg C on the right side but 6-8 deg on the left side. Discussed with kitchen chef that cold air flow may not be reaching all of the food items on the left side.
      • Corrective Action(s): Repair or adjust cooler such that both sides in cooler maintain a temperature of <4 deg C. Chef moved some food items that were potentially blocking the cooler fan from circulating the cold air.
