- Observation (CORRECTED DURING INSPECTION): Various items in prep cooler inserts (across from the fries station) were at 7-9 deg C. Both top prep cooler doors were left wide open during inspection even though staff were not using the cooler for any food prep.
- Corrective Action(s): Spoke with on site manager who showed temperature records from 2 hours prior to inspection that the foods probed in the prep cooler inserts were at <4 deg C. All potentially hazardous foods (cheeses, etc) are to be moved from the prep inserts into a cooler that is <4 deg C.
- Do not overfill the inserts in the prep cooler as it will always be warmer due to the opening and closing. Also, it is important that staff are aware that the lids should be kept CLOSED when not in use to prevent cold air loss.
