    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Some cutting boards were observed with deep black coloured grooves indicating no longer cleanable and requiring resurfacing or replacement. These boards may be 6 or more years old. Please replace or resurface worn cutting boards as discussed at the time of inspection.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Also as discussed, additional cleaning and replacement/refinishing of surfaces are required in the meat processing room in order to comply with health/industry standards for the maintenance & sanitation of food premises. 1.) The concrete floor in the meat cutting room appeared dark/saturated with organics and the epoxy floor finish only remains in a few areas of the room underneath some equipment. Please complete additional cleaning of the concrete floor, as well as, the North side floor to cabinet junction and cabinet interior (ie. stainless cabinet with the 2-compartment sink & hand washing sink) by Jan 31, 2025. Please formalize and implement a plan for refinishing of the concrete floor in the meat processing room and entryway into the room to provide for a surface that meets health/industry standards for food processing facilities (ie. smooth, durable, cleanable, impervious, light coloured, non-slip). Please confirm a plan with Interior Health by Jan 31, 2025 and complete refinishing/re-surfacing of the floor by April 30, 2025. 2.) As noted at the time of last inspection (Jan 19, 2022), peeling paint was observed on a majority of the North block wall inside the walk-in refrigerator (remaining walls/ceiling have been covered with painted aluminum wall paneling in good condition). Paint flakes from the North block wall were again observed on the counter in the packaging area and floor adjacent to this wall. Please formalize and implement a plan for refinishing of the block wall in the walk-in refrigerator to provide a surface that is durable, cleanable, impervious, intact and of lighter colour. Please confirm a plan with Interior Health by Jan 31, 2025 and complete refinishing/re-surfacing of the block wall by April 30, 2025. 3.) Per previous inspections, ceiling insulation in the large walk-in freezer has separated from the ceiling structure above; some ice build-up was also observed on the ceiling. Corrective actions have included installation of strapping and catchment tarps and these appear to have contained the issue until a more permanent repair can be completed. Manager who attended the inspection indicated that the sluffing off of insulation seems to have stabilized with none reported recently. As discussed, please relocate open boxes of food with exposed (but still sealed bags ) from below the location of the freezer refrigeration unit where the largest area of sluffed off insulation was noted.

    • F2.2 Are proper pest control measures in place on the premises?
      • Observation(s): Observed gaps or missing seals on some loading area dock levelers and one overhead door. Manager indicated that they will be starting to replace the three dock levelers this spring and will also look into repairing the one overhead door & seal.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Peeling paint was observed on a majority of the North block wall inside the walk-in refrigerator (remaining walls/ceiling have been covered with what appeared to be a painted aluminum wall covering). Paint from the North block wall was observed on the floor adjacent to the wall. Observed worn/broken laminate counter on the North side of the meat cutting room. Also observed some worn/flaking paint on the adjacent block wall on the North side of the meat cutting room; this wall is a continuation of the block wall observed in the walk-in refrigerator (noted that other walls in the meat cutting room have been covered with an aluminum or galvanized metal wall covering). Per previous inspections, ceiling insulation in the large walk-in freezer is separating from the ceiling structure above; some ice build-up was also observed on the ceiling. Corrective actions have included installation of wood strapping and catchment tarps and these appear to have contained the issue until a more permanent repair can be completed. Manager also noted that a new roof is being installed this year and inspection of the ceiling/roof space above the noted ice build-up on the ceiling interior will be conducted at that time by the building owner/contractor.

    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): - Ceiling insulation in the large commercial storage freezer was observed separating from the ceiling and insulation debris was observed on product boxes on the right hand side. - Metal cutting room table frames are rusted and require replacement with a material that is durable, smooth, impervious and able to withstand continuous moisture exposure found within the cutting room.
