    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical high temperature dishwasher (ran three cycles, 65, 66.6 and 67C) is not adequately sanitizing dishes. Please repair the dishwasher so that it is in proper operating condition at all times.Please ensure that additional sanitizing step, use the 3-sink method for cleaning and sanitizing the dishes that must be continued until repair of dishwasher.Commercial high temperature dishwashers require a minimum final rinse cycle of 10 seconds duration with a rinse temperature measured at the manifold of at least 82C. For these machines, a reading of 71 C at the dish level, using a maximum holding thermometer, is an indication of satisfactory sanitation.

      • Bleach and water solution tested at 400 ppm.Solutions used for sanitizing equipment should be at 100 parts per million (ppm) available chlorine. Please use unscented bleach and mix 1/2 teaspoon of bleach per liter water to obtain 100 ppm for sanitization of equipment and food contact surfaces. Corrected during inspection.E-mailed document on how to prepare a surface sanitizer.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No pest control records available.Coordinator was provided (with email attachment) the AHS pests control checklist.
