- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The facility has a chlorine dishwasher which was dispensing 0ppm chlorine during the inspection due to the bulk supply of chlorine being expired/broken down. Within two hours after the inspection, the operator purchased new chlorine and sent the PHI photos of the dishwasher dispensing chlorine at 100ppm.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- The two ovens in the kitchen are placed on top of unsealed plywood. Please either seal the plywood so it is smooth, non-porous, durable and easily cleanable or install laminate under the ovens.
