- Multiple deli containers were improperly air dried with water droplets trapped in between. In the instance where the equipment is not ware washed properly, moisture could be conducive to the growth of pathogens.
- Staff manually air dried each container. Send area EHO an update the facility's method for air drying moving forward.

- Bar glass washer is dispensing sanitizer that exceeds 25ppm iodine. This is greater than the required range of 12.5-25ppm which poses chemical contamination risk.
- Staff scheduled the unit for repair. Do not use the iodine glasswasher until after follow-up with area EHO. Use the back-end dishwasher in the meantime. Take the following actions: 1. Contact area EHO to schedule a follow-up. 2. Establish a daily sanitation log to regularly check the concentration for iodine sanitizer. Can utilize the Island Health sanitizer log template (sent via email).

- Three containers of opened canned products (tomato paste, coconut milk, chipotle peppers) were stored in the walk-in cooler. Opened canned products can rust and cause the leaching of metals into foods via oxidation.

- Ice machine had black accumulation along its dispensing line. This can cross contaminate the ice that's ready to eat.
- Take the following actions: 1. Empty the ice machine. 2. Clean and sanitize the interior of the machine. 3. Contact area EHO to schedule a follow up inspection to confirm the unit has been properly cleaned and sanitized. 4. Integrate a cleaning schedule for the ice machine.
- Improper Construction / Maintenance of Establishment
- Kitchen backdoor to the outside was left open. This can permit the entry of pest/rodent activity.
- Staff closed the door. Ensure the door is kept closed at all times - especially since the facility has a history of pest activity. Comments Routine inspection conducted. Action items: - Acquire unexpired test as current strips are expired: DDBSA/lactic acid (June 2022); iodine (April 2024). - Store dry ingredient scoops with handles sticking up. - Ensure all stored foods are stored with a protective covering (i.e., lid or cling wrap). Comments: - Overall sanitation and organization of the facility is satisfactory. - All hand sinks are equipped with hot/cold running water, liquid soap, and paper towels. - High temperature dishwasher registered 75.1C after final rinse. - 2-compartment sink equipped with hot/cold running water and 2 plugs. - DDBSA/lactic acid surface sanitizer achieved its required range. Test strips were available but expired. - Soup hot holding registered: 74.7C. - All cooler units registered around 4C: sauce cooler (4.3C); line coolers (1.8-5.1C); walk-in (1.6C). Labels are used for first in first out (FIFO). - Freezer units registered: line drawer (-15.1C); walk-in (-18.6C); chest adjacent to cookline (-25.6C). - Temperature logs are maintained twice daily. IR gun thermometer available. - Bar ice scoop is stored with handle sticking up. - Staff onsite with valid FOODSAFE certification. Expiration date: November 15, 2028. - No evidence of pest activity observed during this inspection. Facility is contracted with pest control services.
