- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Bleach solution was at 250 ppm. Please ensure bleach is at 100 ppm and tested on a test strip.Concentrations must be verified to ensure they are not too strong which can leave a residue on food contact surfaces or too weak which is ineffective at destroying bacteria.
- 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
- Operator is not keeping adequate records to record batches for traceability. Please ensure all batches are numbered or in some way traceable should there be a recall on ingredients or concerns about the food safety of a batch.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Inappropriate steps for sanitizing were described, which were to run utensils through sanitizer solution that was not verified on a test strip or submerged in solution for 2 minutes. Test strips were present but not readily available for use. Reviewed proper manual dishwashing with operator. Ensure after washing with soap and rinsing that all utensils/trays/etc. are submerged in a 100 ppm bleach solution for two minutes and then air dried. Sanitizer must be verified on the test strip.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- No evidence of pest activity, but no pest records are being maintained. Please ensure pest control measures are taken and recorded monthly. Keep records on site for review.
