- Observation: Mechanical dishwasher reaching maximum 64.1C at plate level during final sanitizing rinse cycle. Operator stated it was confirmed to be a high-temperature dishwasher and a technician was on site to conduct repairs to the fuse that was blown.
- Corrective Action(s): Conduct further repairs or replace dishwasher as necessary such that the final rinse cycle reaches at least 71C at the plate level (82C at manifold). As a temporary measure, continue using single-use dishware for serving, and manually sanitize cookware (1. wash & rinse in dishwasher 2. fully submerge cookware in 100-200 ppm chlorine solution for minimum 30 seconds 3. air dry) Correct by: Immediately

- Observation (CORRECTED DURING INSPECTION): Mechanical high-temperature dishwasher not reaching minimum 71C at plate level during final rinse after testing > 5x. Max temperature registered at 60.6C. No chemical sanitizer levels detected using test strips.
- Corrective Action(s): Facility was closing up for the weekend at time of inspeciton. Operator agreed to use single-use dishware and utensils until dishwasher is repaired such that the final rinse temperature reaches 71C at plate level. All cookingware will be manually sanitized with 100-200 ppm chlorine in the 1-compartment sink (Operator stated cooking occurs only on occasional basis; mostly serves premade baked goods, etc). Technician was contacted during the inspection to schedule an appointment.
