- Observation (CORRECTED DURING INSPECTION): QUATs sanitizer measured below 200 ppm at dispenser. Manager stated a technician was previously on site to repair the dispenser.
- Corrective Action(s): During the inspection, the operator purchased a bottle of chlorine and created buckets of chlorine sanitizer measuring 100 - 200 ppm, with cloths stored in solution, to use as a temporary sanitizer. Previously sanitized food contact surfaces must be cleaned and re-sanitized. Please ensure chlorine and QUATs do not mix.

- Observation: QUATs dispenser not dispensing solution in adequate concentration. Air bubble observed in the chemical line.
- Corrective Action(s): Dispenser must be repaired/replaced such that it dispenses QUATs solution at 200 ppm. Obtain unexpired test strips to monitor concentration routinely. Correct by: 2 weeks
