    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The operators were soaking rice noodles in water left at room temperature and without a cover to protect it from contamination. High-risk foods must not soak at room temperature as this increases the risk for foodborne pathogens to grow. As well, without a cover to protect the food can introduce contaminants. Soaking must be done in a cooler and covered to protect the food from contamination. The operator covered the food and placed it in the cooler at the time of the inspection.
