- Observation(s): At the time of inspection, the following infractions were observed: [1] Mildew buildup in the ice machine. Ensure to adequately clean and sanitize the ice machine. Remove all ice prior to cleaning and sanitizing the machine to prevent chemical contamination. [2] Utensils stored in buckets of ice water. Ensure to remove all utensils from buckets of ice water. Provide individual utensils for each ingredient or wash and sanitize utensils between each use. Placing utensils in ice water buckets leads to cross contamination and may discourage staff from properly washing sanitizing utensils.
