    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): Hot holding temperature was at 42C (i.e. soups) Refrigeration temperatures at or below 4C.
      • F1.2A Potentially hazardous foods must be stored or displayed at a temperature of 60 °C (140 °F) or hotter.
    • F1.3 Are proper cooling and reheating procedures followed?
      • Observation(s): Operator should follow the condensed soup re-heating instructions as stated on the label. Operator can provide an induction cooktop to facilitate rapid reheating of soups to 82C since there is no cooking stove available at the Take-Out department.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): At meat department, the cutting / preparation tables had meat/ food residual buildup when the countertops were lifted. The Operator must ensure proper washing and disinfection of equipment.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): At the meat department, a walk-in cooler, and a back access area the floors were dirty and unsanitary. The operator must deep clean the floors. Pictures taken.
    • F2.6 Are the premises designed and equipped to ensure safe food handling?
      • Observation(s): The operator must replace the worn down, damaged flooring in the meat department, the meat walk-in cooler, and the back access area. The operator must install a mop sink at the back access area adjacent to the meat walk-in cooler. Section 2.5 of the Canadian Food Retail Guide is attached for your review.
