      • Observation: Rice scoop was observed placed on top of the rice cooker.
      • Corrective Action(s): Ensure to place the rice scoop in a clean, dry container and wash + sanitize every four hours or place in an ice bath. This is to ensure germs do not grow on the utensil that comes into contact with food.

      • Observation: At the time of inspection, no sanitizer was observed. Operator had prepared a sanitizer bucket that was measuring 10 ppm chlorine.
      • Corrective Action(s): A sanitizer bucket of 200 ppm chlorine was prepared with EHO's test strips. Ensure a sanitizer bucket or bottle is always prepared and being used to sanitize food contact surfaces during operation. Ensure to obtain chlorine test strips to measure the sanitizer concentration is at 100-200 ppm chlorine at all times.

      • 2. Dust accumulation observed on the fan of the walk-in cooler.
      • Corrective Action(s): 1. Corrected During Inspection: Staff member has cleaned the oil dripping. Ensure to have cleaning done for the entire ventilation hood on a routinely basis.

      • Observation: Ongoing mouse activity in the premises. A small number of mouse droppings were visible on the floor behind the cooking equipment.
      • Corrective Action(s): *Protect food ingredients with soft packaging (eg. flour, sugar, rice, etc) from mice by storing them in rigid plastic bins with lids.
      • *Inspect the premises for holes/cracks/gaps that could serve as entry points for mice and seal them with rodent-resistant material.
      • *Follow any/all recommendations of your pest control technician towards eliminating mouse activity in the premises.

      • Observation (CORRECTED DURING INSPECTION): Raw eggs (>10) placed at room temperature for less than 1 hour. Staff had moved the eggs into walk-in cooler at this time.
      • Corrective Action(s): Ensure to have raw eggs stored in cooler at all times. Any cold potentially hazardous food stored above 4'C for more than 2 hours must be discarded.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer bucket had 0ppm chlorine measured. 200ppm chlorine was prepared and staff was advised to have all food contact surfaces sanitized at this time.
      • Corrective Action(s): Ensure to have the sanitizer solution prepared and food prep surfaces sanitized BEFORE initiating any food prep in the morning.

      • Observation (CORRECTED DURING INSPECTION): A cardboard box was placed inside the handwashing sink at the beginning of the inspection. Staff had removed the box. Handwashing sink was adequately supplied with liquid soap, paper towels and hot/cold running water.
      • Corrective Action(s): Ensure to have the handwashing sink accessible for use at all times, as this is the ONLY handwashing station available in the kitchen.

      • Corrective Action(s): Clean all above mentioned areas thoroughly. De- clutter kitchen and remove any items not needed for kitchen. Have grease trap serviced/emptied
