      • *Mechanical dish machine was not reaching a sanitizing temperature. The temperature was measured with a plate thermometer (56-64C). Ensure mechanical dish machine is fixed immediately. Meanwhile the 2-compartment sink will be used for dishwashing and the single sink for handwashing.
