      • Corrective Action(s): 1. Install weather stripping to eliminate gaps and prevent entrance of pests.
      • 2. Have leak in the joint fixed to prevent water pooling which can attract pests.

      • 3. Walk in freezer has a build up of debris on the floor, including ice build up.
      • Corrective Action(s): 1. Have equipment that is no longer in use cleaned to remove any grease and/or food debris or removed from premise. Deep clean hare to reach areas where food has accumulated.
      • 2. Deep clean the inside of the walk in cooler to remove all mould and mildew.
      • 3. Deep clean the floors in the walk in freezer to remove food debris and ice build up.

      • Gaps found at the bottom of doors leading into the dry storage room. Gaps also found on the bottom of an exterior double door (found between two theatres), and gaps found between the double doors. The gaps will allow the entrance of pests.

      • Install door guards/sweeps to the doors to prevent the entry of pests.

      • 1) Food stains observed on the interior walls of the walk-in-cooler, especially behind racks. This will attract pests.
      • 2) Food stains observed on walls in the back kitchen area, storage rooms, and on the legs and undersides of prep tables and sinks. This will attract pests
      • Corrective Action(s):
      • 1) Wash the walls (floor to ceiling) in the walk-in-cooler, more frequently, with hot water and soap to remove the food stains. Move the racks away from the walls prior to washing them, so access to the wall surface is easier.

      • 2) Wash the walls (floor to ceiling) in the back kitchen area, storage rooms, and the legs and underside of prep tables and sinks with hot water and soap to remove the food stains. Increase the frequency this is done and add it to your "detailed cleaning" list.

      • Corrective Action(s): - Use the sink beside dishwasher to fill with QUATs sanitizer, and ensure the concentration is at 200 ppm. Dishware must be fully immerse for at least 2 minutes for proper sanitation.

      • Observation: - High temperature dishwasher plate surface temperature measured at 54.1 degree C
      • Corrective Action(s): - Call the technician immediately to adjust the temperature to 82 degree C at the final rinse cycle, and 71 degree C at the plate surface. Dishwasher can still be used to wash and rinse the dishware. Fill up the sink beside the dishwasher with QUAT sanitizer. Ensure the QUATs concentration is at 200 ppm at all time. Fully immerse the dishware within the sanitizer for at least 2 minutes to kill the germs.
