      • Observation (CORRECTED DURING INSPECTION): No chlorine sanitizer was detected in wiping cloth bucket at the time of the inspection. A food grade sanitizer solution is required for sanitizing food equipment during service.
      • Corrective Action(s): Ensure 200 ppm chlorine solution is avaible in sanitizer bucket for use during service and cleaning.

      • Observation: 1. Old food debris or dust observed on the fans and shelves of the walk in cooler and on the pizza oven stove. Cleaning of these areas required.
      • 2. A plastic sign was used as a cover on the food counter. The sign was dirty with old food debris and tape. This item is contamianted and cannot be used as a food surface (CORRECTED AT THE TIME OF INSPECTION).
      • Corrective Action(s): 1. Clean above noted areas and remove dust, grease and old food debris. Correction required in one week.
      • 2. Only use food grade material for food storage and processing areas. Sign was removed from kitchen counter at time of inspection.
