      • The operator was using vinegar and water solution to wipe down counters. There is a RTU quats sanitizer on site. Please use an approved food safe sanitizer on site such as the quats sanitizer. The operator stated they would use quats.

      • Operator was using a non-food safe sanitizer. Operator made bleach sanitizer on site. (100 ppm). Please ensure to use an approved sanitizer. No test strips. Please obtain test strips to test sanitizer.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No test strips were available in the facility to monitor the concentration of the sanitizer.Provide sanitizer specific test strips in the facility to monitor concentration of sanitizing agent in the solution.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The dishwasher was observed in disrepair. It appears that the front cover is coming off, but still operational. The dishwasher was observed to be NSF approved. The dishwasher should eventually be repaired/replaced.Please use sanitize cycle.
