- A container of BBQ sauce stated refrigerate after opening and was being stored at room temperature. The BBQ sauce was moved to the refrigerator.

- Gravy was measured to be 24 degrees Celsius in the hot holder and had come from the prep cooler.Discussed that gravy is to be fully reheated to 74 degrees Celsius prior to being placed in the hot holder. Gravy was discarded by operator.

- Sanitizer being used was premixed 200 ppm Quat soliton and there was not enough to fill a sink to complete manual dishwashing.Operator obtained regular bleach to fill the sink with sanitizer until concentrated QUAT solution could be obtained.

- Food storage is satisfactory. No raw products. Some frozen foods bags in freezer were kept open. Ensure to always close bags when in storage.

- Handwash sink back kitchen did not have paper towel. Operator replaced paper towel during this inspection. Ensure handwash sink is always fully stocked during operations.
