    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Bleach sanitizer was noted too concentrated and measured above 200ppm. Water was added to dilute the solution down to 100ppm and deemed sufficient. Ensure bleach sanitizer is prepared and measured at 100ppm. (1/2 tsp bleach per Litre water)
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The gravy in the hot-holding unit initially measured a temperature of 56 Degrees Celsius.After increasing the temperature of the unit, the gravy measured 64 Degrees Celsius, which is deemed satisfactory.Please ensure all hot-holding units are capable of holding high-risk foods at a temperature of at least 60 Degrees Celsius, prior to operation.

      • Pest control records have not been completed since April 2024. Please ensure the checklist is completed monthly and records retained on site.

      • Written sanitation procedures/records were not kept.Please ensure sanitation procedures are established and maintained for the mobile unit.

      • An oily sieve is noted in cupboard. Please clean the sieve and ensure all utensils are clean prior to being placed in storage. The operator removed the sieve during inspection.
