      • 1. There was a wet wiping cloth left on the cutting board at the front cold top cooler- Ensure wiping cloths are stored in a sanitizer bucket between uses2. There was no sanitizer bucket setup. When prompted to prepare sanitizer solution operator mixed soap and water.- Ensure a sanitizer solution of 1/2 tsp bleach in 1 litre of water is prepared to store wiping cloths and sanitize surfaces3. Bleach sanitizer in spray bottle was mixed too strong- Solution diluted to measure at food safe concentration of100 ppm
