    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1) Pooled water was found under the dish pits and in the bakery near the dishwasher. Ensure that water is not allowed to pool in food prep area to protect food from contaminated water. Repair the areas to prevent water accumulation and have equipment on hand for water removal.

    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1) Pooled water was found in several places in the facility including the foodcourt back kitchen under the dish pits and in the bakery near the dishwasher. Ensure that water is not allowed to pool in food prep area to protect food from contaminated water. Repair the areas to prevent water accumulation and have equipment on hand for water removal. 2) A movable cart with bouquets of flowers were stored adjacent to food. The cart was moved during the inspection and the manager will relay the importance of storing the flowers away from food. 3) Raw meats were stored near ready to eat meats in a walk in cooler. Ensure that there is sufficient separation between ready to eat foods and raw meats.4) In the pharmacy area protein powder was found stored next to soap. In the cooler area with kombucha, almond milk was stored next dishwasher detergent. Ensure food items including protein powder and almond milk are stored away from chemicals including soap and dishwasher detergent. 5) Brooms were found in several areas including the produce cooler, dry storage, and floral department in the facility next to food. Ensure that brooms are stored separately from food to prevent food contamination with floor debris.

      • 1) Gaps were found in weatherstripping on loading dock doors. Ensure that weatherstripping is repaired to prevent the entrance of pests.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) Caulking in the convection oven was found drooping and in disrepair. The caulking was removed during the inspection. The manager will have the caulking is replaced.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) High touch surfaces including light switches and door handles were found dirty in the bakery. Ensure that high touch surfaces are cleaning and sanitized regularly throughout the workday. Add these areas to your written cleaning checklist to verify completion. 2) Floor debris was found in the aisles with rice, flour, and salt. Some areas of the loading dock had floor debris. Ensure that areas more susceptible to floor debris are cleaned and sanitized regularly to prevent the contamination of food and the attraction of pests.

      • 1) A meat testing area was found dirty and without sanitizer to clean and sanitize the area sufficiently. Ensure areas with food equipment have sanitizer available to eliminate microbes of food surfaces and high touch areas.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1) Pooled water was found in several places in the facility including the foodcourt back kitchen under the dish pits and in the bakery near the dishwasher. Ensure that water is not allowed to pool in food prep area to protect food from contaminated water. Repair the areas to prevent water accumulation and have equipment on hand for water removal. 2) A raw egg has broken on the floor in a walk in cooler. Ensure that spills on the floor including raw eggs are cleaned up as soon as they are noticed. The raw egg was removed during the inspection. 3) A movable cart with bouquets of flowers were stored adjacent to food. The cart was moved during the inspection and the manager will relay the importance of storing the flowers away from food. 4) Raw meats were stored near ready to eat meats in a walk in cooler. Ensure that there is sufficient separation between ready to eat foods and raw meats.5) An area set up for processing beef and fish was in use in the same room due to ongoing renovations. The work stations were in close proximity to each other and there was potential for the meat tenderizer to aerosolize meat juices on a nearby fish packing station. Separate these work stations to prevent cross contamination of food. 5) In the pharmacy area protein powder was found stored next to soap. In the cooler area with kombucha, almond milk was stored next dishwasher detergent. Ensure food items including protein powder and almond milk are stored away from chemicals including soap and dishwasher detergent. 6) Brooms were found in several areas including the produce cooler, dry storage, and floral department in the facility next to food. Ensure that brooms are stored separately from food to prevent food contamination with floor debris. 7) Uncovered baked goods were found in the bakery. Ensure that baked goods are protected. Cover the top level on the baked good carts.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Several boxes of pepperoni meat, tomato sauce, and shredded cheese were found stored at room temperature at a pizza making station. Ensure that only the amount needed for the pizza is left at room temperature to prevent temperature abuse of food that can cause foodbourne illness. The extra boxes of food were replaced in a walk in cooler.

Ensure that utensils used with food are cleaned and sanitized after use and stored in a sanitary manner. 2) An area in the back storage area had meat testing equipment that was dirty and the environment was cluttered. Ensure that all surfaces of the meat testing equipment is cleaned and sanitized every four hours. Include the front panel with dials, under the unit, and loading pans. Organize the area to ensure that meat testing equipment is kept clean. 3) Caulking in the convection oven was found drooping and in disrepair. The caulking was removed during the inspection. The manager will have the caulking is replaced.
