- Adhere to the dates listed on products. Follow appropriate First In, First out (FIFO) practices.

- Rodent droppings observed in upper cabinet close to dishwasher and in dry storage hard-to-reach areas.
- Wash, clean, and disinfect areas. Discussed rodent clean up procedures with operator, EHO to send resources. Run dishes through the dishwasher. Complete a deep clean of the facility.

- Dishwasher final sanitizing rinse is not being monitored and recorded.
- The final sanitizing rinse must reach at least 82°C / 180°F at the gauge (built in thermometer reading) or 71°C / 160°F at the plate level when measured with a dishwasher safe thermometer. Records at least 2x a day during operation. Comments Hand sink clear, sanitary, adequately supplied. Food safety protective temperatures in compliance. Dishwasher final rinse reached at least 71°C at the plate. Minor build up of grease and grime in hard to reach areas. Remove with deep clean.
