- Observation: (CORRECTED DURING INSPECTION) Raw meat in plastic cover and chicken drumsticks was kept stored/cooled on the floor in walk in cooler. The dust propelled from the floor can be deposited onto the foods stored on the floor which may potentially lead to cross contamination of food products.
- Corrective Action: The operator removed the food from the ground and placed it over a shelve. T

- Observation: Meat slicer was not cleaned and sanitized properly and it contained the meat residuals attached to it under the hard to clean surfaces. The meat residuals left on the slicer are exposed to room temperature which may lead to growth of pathogens and toxin formation and may cross contaminate the other food products when the slicer is reused.
- Corrective Action: The operator was told to dissemble the meat slicer and clean and sanitize the equipment as per the manufacturer’s guidelines. Employees must be educated on cleaning schedule for the same.

- Observation: (CORRECTED DURING INSPECTION) Flour stored in paper bags placed on the ground in the kitchen - Could become contaminated if in contact with liquid on floor.
- Corrective Action: Keep flour bags off the ground, or stored in a foodsafe container on the ground.

- Observation: (CORRECTED DURING INSPECTION) Wiping cloths left on the counters between use. (Public Health significance) - Cloths once used can harbor and grow bacteria if left as used at room temperature.
- Corrective Action: Store wiping cloths in a sanitizing solution of 200 ppm chlorine or 200 ppm QUATs. Mix according to the manufacturer's specifications.
