- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The temperature of the cooler in the tent directly beside the truck was measured at an ambient temperature of 14C. Staff indicated that the sandwiches, salads, and cut fruit inside had been recieved within the last 30 minutes. These foods were measured at a temperature of 8C. Potentially hazardous foods were moved out from this cooler and into an alternate cooler inside the truck, measured at an ambient temperature of 6C. Staff indicated that cooler would be serviced as soon as possible. Recommend adjusting the temperature of the drawer coolers in the truck to be at 4C or lower.
