- Subway: The ambient temperature at cold prep fridge to the right was measured at 42F.- Ensure the fridge is able to maintain 40F and lower. Subway: The cream and broccoli soup in the hot holding unit was measured at 58C.- Soup was reheated in the microwave (86C) and hot held at the unit.
