      • 1. There was a loose roll of paper towel on the front counter. Paper towel must be held in a dispenser.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1. In the walk-in cooler, the sliced tomatoes bowl was inside the shredded lettuce bowl. Food containers should never be nested.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Hot held gravy was measured to be 55C. Hot foods must be held at 60C or above. The steam table on the grill does not impart enough heat into the gravy to maintain 60C. Find a way to increase the temperature of the gravy to 60C or greater. Possibly place the gravy container directly on the grill or use a small crock pot kind of heated container.
