    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • No temperature logs were available for fridges, freezers, and hot holding equipment.Please ensure a logbook or checklist is created and implemented to ensure all temperature control equipment is continuously monitored and documented to effectively maintain food products.Supporting safe temperature control practices, including removing food from malfunctioning equipment if required, ensuring all food continues to remain stored safely.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A small gap was observed at the bottom corner of the door and frame. The back door did not form a tight seal when closed.Please ensure weather stripping or a new door sweep is installed so the door forms a tight seal, with no outside light visible from the inside when the door is closed.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Multiple freezers had frost accumulation present.Please ensure all freezers are emptied, defrosted, and cleaned to ensure no significant frost buildup is present.Please also update routine practices and cleaning protocols to include regular monitoring and cleaning of freezers to prevent significant frost accumulation from occurring.

      • Several packs of frozen yam puree were observed to be sat out to thaw at room temperature.**Please ensure food items are thawed safely in a cooler, under cold running water or using a microwave oven.-The operator placed the items under cold running water during the inspection.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The manual dishwashing procedure reviewed staff was inadequate. Dishes are not being immersed in sanitizer for an adequate period of time.**Please ensure dishes are completely immersed in sanitizer for at least 2 minutes before being set to air dry.
