      • The QUAT sanitizing solution in the sanitizing bucket used at the cookline was measured at 100ppm. Staff refilled fresh solution measured at 200ppm.**Please ensure that QUAT sanitizing solution used in the food prep area is maintained at 200ppm at all times.

      • Cardboard was used to line a shelf in the walk-in freezer.**Remove cardboard as cardboard cannot be cleaned.**Cardboard sheet may be replaced by material that is smooth, cleanable and impervious to moisture.
