- Two containers of processed cheese slices in the prep cooler were stacked above the prep cooler compartments and measured at approximately 12C. The container was not marked with discard times. Operators indicated that a recent company-specific procedure was implemented and approved for cheese a few months ago, which allows cheese to be kept at room temperature for up to 8 hours. Ensure that a Time as a Public Health Control application is submitted to AHS. AHS Environmental Public Health must be notified in advance and must approve these changes prior to implementation.
