It is recommended to install a durable corner guard (such as, stainless steel or rubber) and finish the surface with smooth, non-porous, and easily cleanable material to better withstand this high-traffic area.Ensure the surface is maintained in good condition to allow effective cleaning and sanitation.

- 1.Cleaning is required under shelves, in corner areas, and behind the Bag-in-Box (BIB) area, where buildup was observed on the wall and surrounding surfaces. 2.Sauce spillage was also noted beneath shelving in the walk-in cooler.(1-2) Ensure all affected areas, including walls and hard-to-reach spaces, are cleaned regularly and maintained free of buildup to support proper sanitation.

- Quaternary ammonium sanitizing solution is mixed and dispensed from a unit in the dish pit into sanitizing pails. Concentration of the solution was measured to be at 100 ppm with a QT-40 test stip. Solution inside the pail was replaced by the inspector during the inspection and verified to be at 200 ppm.
