This appears to be due to a potential blockage in the drainage line. Please contact a qualified contractor to assess and repair the affected components of the ice maker. Corrective actions: Please ensure that you are maintaining a quats sanitizer solution of 200 ppm. If the solution you have prepared is too strong, dilute it with water until the test strip indicates the concentration is 200 ppm.

- In the customer-accessible freezer for ice cream cakes, there was an ice cream cake stored without a cover. Operator noted that the cover for this size of ice cream cake blocks the design and customers complain that they are unable to see the cake.PHI suggested that staff remove the cake and open the box to show customers at their request, and noted the requirement to store food covered and protected from contamination.Operator was agreeable to this method of showing customers the cake design and placed the cake in the covered box.

- Near the prep cooler area, there was several bulk, bottled sauces stored at room temperature. The bottle stated to 'refrigerate after opening.' There was also an open bulk can of white queso sauce stored at room temperature with the sauces. The can stated to 'stored in a cool and dry place'. Operator noted that the queso is usually stored in a hot holding unit but it is in disrepair and they are waiting on a replacement.Operator relocated the sauces to the prep cooler and relocated the queso can to the walk-in cooler.PHI educated operator on following manufacturer's storage guidelines and the risks of storing food requiring refrigeration at room temperature.
