    • Poor Sanitary Design, Construction, Installation of Equipment & Utensils
      • Knives stored between prep tables is not a sanitary location.
      • Knives were removed and sanitized. All tools and equipment must be constructed and stored to keep them clean when not is use.
    • Improper Sanitary Facilities
      • Repeat observation for the one hand washing sink faucet connected to garden hose for garden watering.
      • Hose was removed during inspection and must be kept clear at all times during operating hours.
    • Improper Construction / Maintenance of Establishment
      • Improvements have progressed but continue to maintain routine cleaning to remove built up grease and debris around the stove.
      • Comments Routine inspection conducted today. Hand sinks supplied with hot and cold water, soap and paper towel. Quat sanitizer at 200 ppm corrected. High temperature dishwasher at 74.6°C at plate level. Fridge temperatures at =4°C. Freezers at =-18°C. Temperature logs on-site. Continue to monitor and log daily. No signs of pest activity noted.
