- Food items were found stored past the discard date indicated on time labels. Operator immediately discarded the expired items.- Ensure all foods are monitored and discarded by the labeled date.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Sanitizer concentration in the 2-compartment sink was undetectable. As per operator, utensils were placed directly into the sanitizer solution after washing without a rinse step. - Operator was informed on how to properly use the 2-comp sink for dishwashing:1) Sink 1 - wash with soap and rinse with warm water2) Sink 2 - sanitize with available 200 ppm quat sanitizer for at least 2 minutes and then air dry.

- Accumulation of debris noted in the storage deck above the walk-in cooler. There was a lot of clutter, with many miscellaneous items stored in the area. - Declutter/re-organize and thoroughly clean the area.
