    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Paper towel roll for front handwashing station was placed directly above open meat cooler, posing risk of contamination.- Operator is to ensure to place paper towels in the dedicated area near the hand sink.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A container of butter and soft margarine were stored at 21.6C at the front food prep area. Packaging indicated items to be 'kept refrigerated'.- Ensure to store all food items as per manufacturer's instructions and make sure that products labeled 'keep refrigerated' are maintained at 4C or below.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Caulking around the dishwashing sink was visibly dirty and peeling off.- Replace the caulking and ensure it is made of material that is smooth, durable, and easy to clean.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Facility uses a secondary bucket to soap used rags in chlorine solution in addition to Quat. However, the bleach is lemon scented. - Manager was advised to refrain from doing this unless the chlorine is confirmed to be regular non-scented to be food safe.- Acquire regular non-scented bleach for this practice and ensure solution is at 100ppm.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • 1) Expired Quat test strips.2) No chlorine test strips.- Acquire new test strips.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Factory vinyl wrap is still on the dishwasher and peeling off resulting in small accumulation of dust and debris to the sticky side of the wrap.- Please remove the vinyl wrap from the exterior of the machine as it is not easily cleanable.
