      • Front handwashing sink was not easily accessible. Step ladder and chair was placed in front of the sink. Operator relocated the items during inspection.- Ensure hand sink is unobstructed for staff use at all times

      • Raw meat was being thawed in warm water. Properly thaw meat under cold running water or in the cooler.

      • At the time of inspection, quat test strips were not available at the Bistro area. Corrected during inspection
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Hand wash station at the Bistro area was blocked with a small step ladder. All hand wash stations are to be kept free and easily accessible at all times.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • QUAT dispenser above mop sink in main kitchen dishwashing room was measured at >400ppm tested with both inspectors and facilities test strips during QUAT bucket change out time.- Manager resolved the issue by opening the faucet to ensure chemical is mixed with water.- Ensure staff that are tasked to change the sanitizer solution buckets are turning on the faucet and testing with test strips to ensure QUAT solution is at 200ppm.

      • Stainless steel food container with no handles was stored in the bulk rice bin.- Replace this bin with an appropriate scoop with handles and ensure scoop is not stored directly in the dry ingredients to prevent potential contamination from staff hands.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Small above counter cooler in the staff cafeteria was pooling with water. - Determine the cause of the pooling water and fix the issue.
