      • No - there was accumulation of dirt/dust and soot on the floor and wall sections in main kitchen area surrounding the pizza oven. As the old pizza oven is being replaced shortly, staff will be conducting a deep cleaning of the area prior to installation of a new pizza oven.

      • No - the filters in the exhaust hood canopy were significantly soiled with grease/oil accumulation and requiring cleaning, alongside the professional cleaning of the exhaust hood canopy (with scheduling of cleaning in progress, to be completed shortly).

      • Operation had a large bus pans of raw fish and cooked chicken out at room temperature. Manager indicated that he should be allowed to have perishable foods out at room temperature for up to 2 hours. Indicated to him that his was not optimal food handling practices as he could not verify how much cumulative time foods of this nature had been out at room temperature.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Operation was required to clean white plastic bins, associated wall splash area, fire suppression cannister, back microwave oven and associated shelf, kitchen door frame, and splash area of garbage can.
