- Observation(s): High temperature dishwasher not reaching acceptable sanitizing temperature. Ensure either single use glasses are used or they are sanitized in a 200ppm bleach solution or 200ppm quats sanitizer. Operator advised he will obtain quats. Glasses must be fully submersed for a minimum of 1 minute and then allowed to air dry.
