    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No (update) - there was new observation of some rodent (mouse) entry in the food premises, only at the main kitchen central area. There were a total of six (6) dead mice observed in two metal traps at main kitchen: trap #65 (5 dead mice) and trap #58 (1 dead mouse). There was no observation or evidence of any mouse droppings in main kitchen, dishwashing area, and adjacent food prep areas.The operator is to discard the captured dead mice, wash and sanitize the adjacent floor sections, and continue with the licensed pest control company service (including identifying any 'rodent-entry points' adjacent to main kitchen and dishwashing area corridor).

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • No - there was a lack of consistent water flow from the hand-wash sinks (due to the automatic sensors) at the main kitchen and adjacent dishwashing and food prep areas, with operator to ensure at least 20 - 30 seconds of continual water flow from each sink when the automatic sensor is enacted during staff hand-washing action. Alternatively, hot and cold water faucets can be installed if the automatic sensor action is non-functional or limited in duration (i.e. operator not able to adjust length of time of hot and cold water flow).
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No - there was observation and evidence of rodent (mouse) entry/activity in the food premises, particularly at the main kitchen, adjacent pastry area, and adjacent dishwashing area (with all evidence of activity limited to captured dead mice in metal traps - with no mouse droppings in food premises areas). There were a total of twelve (12) dead mice observed in metal rodent traps in the three noted areas: trap #55 (8 desiccated mice), adjacent to trap #57 (1), trap #25 (1), trap #44 (1), and trap #46 (1).The operator is to discard the captured dead mice, wash and sanitize the adjacent floor sections, review pest control service with the licensed pest control company, and to conduct a 'structural audit' (i.e. identify rodent-entry points) in the premises along with continued regular pest control service and monitoring. Also, operator to ensure use of any UV light fixtures for fly/insect control at delivery bay areas, etc., are functional for upcoming spring/summer seasons, as necessary.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Yes (corrected during inspection) - there were four (4) dessicated dead rodents (mice) observed in a metal trap under the hand-wash sink in the main dishwashing area, adjacent to the open washing room with the large compostor. All other insect/rodent traps in the premises were clear/empty. The operator discarded the dead rodents from the metal trap at time of inspection. The operator has a regular contract with a licensed pest control company (with invoices available for review on-site). Also, review of pest control procedures and monitoring to be coordinated between the operator and pest control company.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Yes (corrected during inspection) - the updated annual Food Handling Permit (expiry date of September 30, 2026) was not posted in a conspicuous location available for public view. The operator was advised to post a copy on the side wall alongside the city business license at the main office area open to the public.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Yes (corrected during inspection) - there was a section of light fixtures with displaced light covers in the walk-in cooler in pastry area. The operator is to ensure that all light covers are properly set-in-place to ensure protection should the light tube or bulb break.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Yes (corrected during inspection) - note that there was one (1) rogue rodent (mouse) observed in rodent metal trap #40, adjacent to a hand-wash sink in the central main kitchen area. There was no other evidence or observation of any rodent activity or droppings anywhere in the main kitchen areas, corridors, halls, and adjoining rooms.
