- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- The quat sanitizer at the 2-comp sink was measured at 0pppm Sanitizer line and chemicals were changed/serviced and quat was measured at 200ppm.
- 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
- Food handling permit was not posted on site. Ensure a valid food handling permit is posted at a visible location to the public.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- The hot holding unit was measured less than 60C. Croissant with meat slices were stored in this unit. Lower level of the unit was 60C, but the top unit where the croissant was stored was between 45-50C. Operator indicated food is stored in the unit for less than 2 hours. Hot holding unit should not be maintained above 60C at all levels food is being stored, have a functional thermometer, if food will be held above 2 hours.
