- Sushi prep cooler measured an ambient temperature of 12 degrees Celsius. Staff were not keeping all sections of the top of the prep cooler full, which was allowing cold air to escape. Staff were instructed to fill blank spaces with empty containers and to monitor the temperature of the prep cooler. Ice baths were being used for high-risk items.
