      • The concentration of Quat sanitizing solution in two buckets was too strong (above 400ppm). The PHI prepared 200ppm solution with the staff present during inspection.Please purchase Quat sanitizer test strips and ensure 200ppm is maintained at all times.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Improper thawing was observed. Frozen beef was soaked in water inside the kitchen sink to thaw. The staff present was advised to open the tap and ensure the meat is thawed under cold running water.Please note that food items can be thawed properly under cold running water or inside the cooler.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Sanitizer test strips were not available to measure the concentration of sanitizing solutions. The facility uses Quat sanitizing solution. Please ensure Quat test strips are purchased and made available.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Food handling permit for the facility was not posted/displayed.Please ensure a valid food handling permit is displayed at a conspicuous location in the facility.
